Though I have lived in New Mexico over 15 years, I had never tasted that NM-created delicacy, Frito Pie, until this past Saturday. It was being served up free by people staffing an Obama table at a picnic thrown for local Democratic Party volunteers. ( No Hillary Clinton table--perhaps as the event occurred right after her " June assassination" brouhaha?! Who knows.)
Anyway--I asked for the vegetarian version. Friends, it was tasty, messy, calorific, fine.
Recipe: Take one small bag of Fritos, open it, pour in a generous dollop of chili, add shredded Jack cheese, plus salsa, and eat. ( Some also include sour cream and guac, but not this time.) The combo of mushy atop crisp really worked for me, though I doubt I will ever make such a dish myself. Still, fun.
Other tables offered more pedestrian Amurrican cookout fare.

I, too, have tried Frito pie, I think at a potluck somewhere a few years ago. Not bad, but I don't really see what all the fuss is about. Nowadays as I think more about food in general, I don't think I'd be willing to eat Fritos! Probably GM corn and god knows what else in there...

It's the "god knows what else" that really sticks in the craw--but yes--I only buy blue or white corn products on the assumtpion, I hope, that they are never GMO derived.

I first had Frito Pie at a campaign event too, and it was Mark Rudd who made me a veggie version. Very nice!
